How to make Lay’s Chips
The first step is to select the right potatoes. Lay’s uses Russet potatoes because they are starchy and high in solids, resulting in crunchy chips. The potatoes are then washed.
The potatoes are then peeled and cut into thin, uniform pieces. This is usually done using a mandoline or food processor.
Cut potatoes are soaked in cold water for 30 minutes. This helps remove some of the starch from the potatoes, resulting in crispier chips.
The potatoes are then dried thoroughly using paper towels or kitchen towels. It is important to remove as much moisture as possible from the potatoes before frying, as this will help prevent them from sticking together.
The potatoes are then fried in hot oil (350–375 °F) until golden brown and crisp. This usually takes 2-3 minutes.
Once the chips are fried, they are taken out of the oil and salt is added. Lay’s also uses a proprietary spice blend on some of its chips.
The chips are then cooled on a wire rack or paper towel.
The cooled chips are then packed into bags or canisters.
Lay’s Chips are made using a continuous fryer, meaning the potatoes continuously move through the fryer on a conveyor belt. This allows Lays to produce large quantities of chips quickly and efficiently.
Lay’s Chips are also made using a proprietary process that helps preserve their freshness and flavor. The chips are vacuum-sealed in bags and canisters, which helps keep them from going stale.
